NIGERIAN MEAT / MINCE PIE.



The most resounding memory of meat pie I had is none other than the good old days of Mr Biggs.
 The meat pie at that time was the deal! What a memorable experience 😂 Even though, the narrative tends to differ in this day and age.


Mince pie or Meat pie is generally a snack made using, meat as the filling wondering if it's mince pie or meat pie the thing is both are correct and can be used interchangeable just because they both contain meat which is the key ingredient for either mince pie or meat pie so don't get it twisted. It can be enjoyed as brunch - it can also be used as refreshment during seminars, events and picnics.

 Always remember every aspect of making meat pie is essential, I divided the processes into three;

 The Pastry:- This tells the eater what they are about to indulge.


 The Meat Pie sauce / Filling :- The filling shouldn't be taken with levity it's the most phenomenal aspect that defines your meat pie how rich your filling is will determine whether or not your eater will enjoy it.

and The Assembling and Baking:- This moment will eventually lead to the taste test 👌🏾

MEAT PIE INGREDIENT:

Mincemeat
Irish potato
Carrot
Spring onions
Curry
Dried Thyme
White / Purple (Red) onions
Cayenne pepper
Cameroon pepper
Black pepper
Veg. Oil
Seasoning
Salt
Soy sauce
Thickner (Cornstarch / Flour + water)



ANALYSING THE INGREDIENTS. 

Every ingredient listed above will make your meat pie come out beautiful and tasty. You can go all out to add whatever spice of your choice but make sure they don't get to over power one another. The outcome totally depends on the quality of ingredients added when making the sauce.


PROCEDURES / STEPS.

To make the meat pie sauce you'll need to prep the ingredients.

Step 1: peel potatoes, clean carrot and dice. Place in a saucepan add salt and water. Bring to a boil.

Step 2: When potato and carrot have boiled till it's soft, drain in a colander.

Make the sauce:

Step 3: Place a pan on heat, add in some oil, add mincemeat and pan fry for few minutes.

TD's Tip : It is advised that you take all necessary precautions when dealing with heat and hot oil.

Step 4: Add in the minced garlic, ginger, seasoning, Onion. Cameroon; Cayenne and Black pepper, curry and thyme, salt and spring onions.


Step 5: Stir it all till it's well combined at this stage check for seasoning and add in the soy sauce.

TD's Tip: It's very important to always check for taste from time to time in order not to end up with an oversalted sauce. Use the ingredients sparingly but also in moderation.

Step 6: Add the cooked potato and carrot to the sauce.

Step 7: At this point, make a thicker using corn starch/ flour + water. Add to the sauce and stir till it's well combined.

Step 8: Take sauce off heat and let it cool.


TD's Tip: It is expected that you let it cool before putting inside the pastry.

Assembling the pie 

Step 9:  Roll out the pastry on slightly floured surface using a rolling pin.

Step 10: When rolled out to about an inch, use a meat pie cutter to cut out circles.

Step 11: In the center of the cut out add in the sauce halfway through and enclose with the other half.

TD's Tip: Other cutters can be used when cutting out the pastry. But also make sure it's round enough to take the sauce and also encloses properly.

Step 12:  Use the cutter to enclose the pastry, place on a greased oven tray, and brush with some egg wash.

TD's Tip: Now if other cutters were used in cutting out the pastry, a fork can used to enclose the edges.

Step 13: Place the assembled pie in a preheated oven and bake till it's golden brown.
