Who doesn't love cakes at Christmas? Oh! most especially the chocolate or dark forest types infused with lots of raisins or mixed fruits as it's popularly called. You know apart from the love for turkey or chicken even Christmas pudding and Nigerian party Jollof rice during Christmas I absolutely love chocolatey cakes. The richness of your cake is totally in your hands so get the right ingredients I usually advice don't over do it, just go for the ones you can afford and of cause quality ingredients you really do not want your guests or family members to not enjoy your Christmas cake because everyone deserves a swell time this season. I absolutely love this season cause I always crave for chocolate cakes it's my all time favorite and I always look forward to baking even though for few years now I haven't been opportunied to but am happy I get to share my all time favorite Christmas chocolate cake recipe with you! DUNDUN : SKERIDODO RECIPE !

Popular Nigerian street food often eaten with pepper sauce or other sauces. This is a very nostalgic food cause I enjoyed it so much  in my Junior secondary school at every break. We called it SKERIDODO then, every student loved it and it wasn't far fetched cause we had a frying point we usually buy all sorts from.

PLAIN STEW.

There's nothing extra about this stew just the basic stew ingredients I only took this to another level by adding ground crayfish and extra pepper to feel that Nigerianess. Check out the pepper mix ratio I had this with boiled egg, rice and beans it was yum yum  .

Salad with a twist.

Hello fitfams! As a food blogger I make both way my take is if truly we want to eat healthy then let's make it complete by not adding "processed" food. Salad should be healthy isn't it?  And this was made with a twist. In the recipe below I gave adequate details concerning each ingredients used.

Moin-moin can be buttery and fluffy. A popular bean meal made into pudding often taken as breakfast, lunch or dinner as the case may be. This basic process involves you peeling and grinding the bean into a paste.

RESCUE STEW (Corn beef).

I termed it "Rescue" cause of the circumstance behind the making, I didn't have any meat or fish as at the time I was about making this stew but on checking ingredients available, I found just a can of corn beef and I decided to make a stew with it.

I love! love!! love!!! this crisp and spicy chips. The interesting part is that, it was flavorful it had the spicy, sweet and savoury taste.

As a foodie I patiently wait for Saturday's or just that special day mum soaks beans then it dawns on me that beans fritters is loading, just because I'm a fan of beans fritters also known as beans cake I've tried so many twist when making mine.

This is one of the most simple ways of gaining vital nutrients in a nutshell. Your body gets all the nutrients required and it is very stressfree and easy to make.

When growing up I was always expectant of the maize / corn season it was a time I knew I could eat roasted,  boiled corn or even  make ogi/pap with my mum, cook egbo and also make beans and corn dish the list is endless funny enough my dad stopped me at a point as a kid from taking anything made from corn 'cause of my unceasing cough he believed anything made with corn or that has corn origin made me cough but you know, when I go out and  I'm opportunied to eat corn I will munch it quickly before getting home.

Apple is one my favorite fruits nothing compares to munching  a fresh green or red apple before or after meal (you get that feeling right?  ) However, it's no longer news the incessant rise of apple in the market but you know when you love something you do all it takes to get it.

Call it bread, hamburger bread or even buns..  The choice is yours it will interest you,  that I hurriedly created this recipe sometimes last year but I didn't film it then but here it is. However,  this basic recipe can be substituted when making bread it's pretty easy no additional ingredients just the common  everyday ingredients you come across and as well get in the market.

You don't have to wait till you get a buttermilk from a store, you can make it at home..

Baked Moi-moi.

Moi-moi / bean pudding either plain or infused with orisirisi (I.e egg,  fish, crayfish, liver etc. ) is great you know  in this recipe the baking was the big deal, I made use of an earthware / oven safe dish which is more healthier than nylon/plastic. But you know what ?

Jollof can always be attached to various food be it pasta, noodles, couscous, rice etc. One interesting thing is that local ingredients can always be infused into the Jollof recipe and also I made use of our regular Jollof spices and ingredients.

#NewMondayRecipe : How to make a simple Puff-Puff

Puff-Puff for the win!!!  Who doesn't crave for some nice, round puffy balls?. Puff-Puff is one of  the most common Nigerian snack often served in parties etc. For this recipe I  didn't use too many ingredients I just kept it simple. Having close to 6 recipes or thereabout, for Puff-Puff I decided to share this with you.

Oven Roasted Peanuts.

This simple method of roasting peanut which  I was able to wrap my head and magical fingers around I tell you really worked obviously if it didn't I wouldn't be sharing the procedure. It's oven roasted, crunchy and delicious. I got this peanuts from a friend in the north. I know we all wonder if it's either called peanuts or groundnut you've got no problem the two can be used interchangeably. To be specific  peanut is also known as the groundnut, goober, or monkey nut, and scientifically under the taxonomy classification it is called Arachis hypogaea, Peanut is a legume crop grown mainly for its edible seeds. It is widely grown in the tropics and subtropics regions.

CRISPY PLANTAIN CHIPS

All of a sudden, I decided to make something very light and nice. So I thought of making  ' PLANTAIN CHIPS ' as many will call it but I will call it ' CRISPY PLANTAIN CHIPS ' because I spiced my with a little of cinnamon, ground pepper etc.

A breakfast inspired by peak milk. We all know protein is essential for the body the use of protein in this dish (I.e corned beef, eggs, milk) all accumulates to having a healthy dish/breakfast.

Often times we get bored of taking the same dish over and over again but, I decided to make a twist to this fried egg. It's just about being creative. Yes of cause you can add in other vegetables like carrot, celery and what have you but I specially chose these veggies for my Veggie Fried Egg.
