Akara | Beans Cake Recipe!!! (fritters)

As a foodie I patiently wait for Saturday's or just that special day mum soaks beans then it dawns on me that beans fritters is loading, just because I'm a fan of beans fritters also known as beans cake I've tried so many twist when making mine. 
It is another way of making use of beans all you need do is to blend the peeled beans, add your selected ingredients and fry in hot oil.  Yorubas call it — Akara, Igbos— Acaranjé and Hausas — Koose. It is often enjoyed with pap,  custard,  bread, garri, oat etc. taken as breakfast, lunch even supper it all depends on how and when you want to enjoy it. I'm going to be sharing a twist on how I make mine.
Ingredients:
2cups beans
Scoth bonnet peppers (rodo)
Vegetable oil (for frying)
Salt
Medium Onion ( roughly chopped or diced)
Ginger and
Garlic (3 cloves)
One large egg (Optional)
Equipments: turning stick/spoon, mixing bowl, blender, pot / frying pan, knife, scoop, measuring cups and spoons.
Procedures:
Step 1: soak beans for about 30minutes to ease the peeling of the skin.
Step 2: prep other ingredients like peeling the onions– if roughly chopped it can be blended with the beans or if diced can be folded into batter before frying, peel the ginger and garlic and wash the peppers.
Step 3: you can either peel off the beans skin using a food processor, mortal or your hands. It's totally your choice.
Step 4: In a blender, pour in the peeled beans, peppers, ginger, garlic and onions pulse till it  forms a smooth thick constitency.
Step 5: pour into a bowl with a wooden spoon/stick beat in some air into the bean paste. When doing this add salt, egg and some diced onions stir till it's fully incorporated.
Step 6: heat up your pan of oil till you hear the sizzle sound it's hot enough for frying start scooping in the bean batter.
Step 7:  Don't over crowd the pan, fry the batter in batches, flip it both ways to  enable it fries evenly and till it's golden brown.
Step 8: Serve and Enjoy!
