This deliciousness makes an awesome breakfast. If you're of the belief that nothing goes to waste in your kitchen then this is a recipe for you. Bananas are my go to snack, one of my most favorite fruit. One thing that attracted me is that, Its a hygienic and nutrient packed fruit it can hardly get contaminated only when the peels are off.

Basically, banana bread is a dish made from mashed bananas this comes handy especially when you have overripe bananas. Its just incredible with the permeating aromatic smell of banana bread filling the entire house when the baking process starts. I look forward to this banana aromatic smell because it gives me so much life and it reminds me of my dad who always teases me with the flavors of anything am baking. (He just never goes wrong in detecting flavors.)

Banana bread definitely an option for breakfast or desserts. So if you're having it at any preferred time of the day its best served with some tea, coffee or juice. I used two bread loaf pan making this is a doubled recipe in case you want something small just slash the detailed recipe below it's quite easy. In this recipe, I used crushed peanut and raisins as toppings and it was amazing!

Now let's cook!

INGREDIENTS:
10 bananas
2 eggs
150g sugar
160 melted margarine
2tsp baking powder
2tsp vanilla extract
2tsp banana flavor
400g flour
1tsp salt
Raisins
Crushed peanuts
1TBSP Dark rum (optional)
40 minutes {Total baking time}

STEPS / PROCEDURES

Step 1: Melt margarine, sift out flour and baking powder and combine, peel banana and mash.

TD's Tip: I used 10 bananas because I got the medium sized one from the grocery if yours is a little bigger than this then use 8.
On the use of a masher you can use a blender if you prefer convenience the only difference is that it comes out smooth.

Step 2: In the mashed bananas, add the melted margarine, sugar, eggs and fold in with a spatula.

TD's Tip: The sugar can be drastically reduced if you aren't the sweet tooth type or if you're watching your sugar intake.

Step 3: Add in the flour and fold in using the cutting method.

TD's Tip: The beauty of a nice textured banana bread is by not over mixing or adding  too much pressure.

Step 4: Half way through folding in the flour,  add the vanilla extract, banana flavour and dark rum. Combine it all

TD's Tip: Addition of dark rum is totally optional. Also adding banana flavor I just needed more indepth flavour.

Step 5: Prepare your load pan. Add in the banana bread mixture, level and add your toppings.

TD's Tip: Leveling your mixture will make it bake evenly. Addition of toppings is optional I used crushed peanuta and raisins but sesame seeds is another very good option.

Step 6: Bake in a preheated oven for about 35-40 minutes. Viola!  Your beautifully baked Banana bread is ready
Enjoy!
