Simple veggie stir-fry.


This is one of the most simple ways of gaining vital nutrients in a nutshell. Your body gets all the nutrients required and it is very stressfree and easy to make.

Ingredients:
Carrot (diced) 2–3 pieces
Green bell pepper (diced / shredded) 1–2 pieces
Red bell pepper (diced / shredded) 1–2 pieces.     
Yellow bell pepper (diced / shredded) 1–2 pieces
Salt  (pinch)
Seasoning (preferably chicken flavor)
Cayenne pepper 1–2 tsp
Curry and thyme  1tsp each
Spring onions (chopped)
Onions (diced)
Ginger and Garlic (grated)
Sweet corn ( 1 can )                                                        
Oil (1 TBSP)
( Recipes makes up to 4 servings)
Equipments: Frying pan / Skillet, wooden spoon, knife, chopping board and cooker.
Steps involved:
Step 1: carefully select your ingredients, rinse,  for the bell peppers cut out the core and remove the seeds then dice them up.
Step 2: grease your pan with little oil and place on low heat add in the grated ginger, garlic and diced onion fry for 1 and half minutes. add in the diced carrot keep stirring it till it's a little bit cooked and also to prevent it from burning.
Step 3: add the sweet corn, seasoning, cayenne pepper, curry and thyme give it a  nice stir.
Step 4: add the diced bell peppers and spring onions to the mixture. Stir till all the veggies are well incorporated.
Step 5: Check for taste and adjust if necessary. Serve with rice, yam,  potatoe, flat bread etc. Enjoy!
Note
👉The cooking should be done under low heat.
👉 You can also substitute with any other vegetable of your choice.
👉 This stir fry can serve as base for other cookings.
👉 Don't over cook the veggies it is expected to be crunchy when eating.
