Christmas Chocolate Cake Recipe!

Who doesn't love cakes at Christmas? Oh! most especially the chocolate or dark forest types infused with lots of raisins or mixed fruits as it's popularly called. You know apart from the love for turkey or chicken even Christmas pudding and Nigerian party Jollof rice during Christmas I absolutely love chocolatey cakes.




The richness of your cake is totally in your hands so get the right ingredients I usually advice don't over do it, just go for the ones you can afford and of cause quality ingredients you really do not want your guests or family members to not enjoy your Christmas cake because everyone deserves a swell time this season.
I absolutely love this season cause I always crave for chocolate cakes it's my all time favorite and I always look forward to baking even though for few years now I haven't been opportunied to but am happy I get to share my all time favorite Christmas chocolate cake recipe with you! The thing is I have so many recipes for chocolate cake they come in variants some defer in the ingredients used but this is so simple and easy. I call it my basic recipe.
Ingredients :
Mixed butter cream— (Sugar and butter) 500g each.
Eggs 8
Browning 3TBSP
Unsweetened Cocoa powder 3 heapTBSP
Salt pinch
Raisins 1/2 cup
Nutmeg and cinnamon 1/2TSP each
Vanilla extract 1/2TSP
All-purpose Flour 500g
Baking powder 2TSP levelled
Rum 2—3TBSP
Zest 1TSP
Instruments: Spatula, Mixing bowls, Baking tin 8inch round pan, Pastry brush, Standing mixer/ Electric Hand whisk, hand whisk etc.
PROCEDURES / STEPS:
Firstly, measure out your ingredients when done, in a standing mixer or electric whisk combine together sugar and butter till it's fluffy.
TD's Tip: This is a major step in baking cakes "Creaming method". The butter or margarine as the case may be is  expected to turn cream in colour very close to becoming white it looses it's original yellow colour.
In a separate bowl whisk eggs till it's foamy and set aside. In another bowl, combine the dry ingredients flour, Cocoa powder, baking powder, cinnamon, nutmeg etc.
TD's Tip: Always sift your flour atleast two times to allow air pass through it also helps to get a really nice and fluffy cake.
Add the whisked egg and flour in portions till it's fully incorporated into the butter and sugar.
TD's Tip: Now one thing is don't over mix your cake batter at this point you are not expected to even add much pressure if using a standing mixer or hand mixer it's expected that you reduce to 1 or 2 just in a slow motion.
Add in Zest, Vanilla extract, Browning, Raisins etc. And keep mixing on the same speed pour some rum over the batter and mix till it's fully incorporated.
TD's Tip:To prolong the shell life of your cake you are expected to add a preservative one thing many won't divulge is that majority of the cakes you buy in stores contain some sort of alcohol.
Generally, when cooking or whenever heat comes in contact with alcohol it burns and escapes. Making your cake still safe or any food alcohol is used to cook safe for consumption.
Heat up your oven set to level two of your oven knob or 250°C. Oil your pan and dust with some flour pour in the cake batter, place into the oven and bake till it's done.
At this point your neighbors and entire house should be filled with the smell of baked chocolatey cake.
