#Pecadomo : Boiled yam and Peak infused fried egg.
A breakfast inspired by peak milk. We all know protein is essential for the body the use of protein in this dish (I.e corned beef, eggs, milk) all accumulates to having a healthy dish/breakfast.
Ingredients:
Yam (5-6 slices)
Eggs (2)
Peak milk (1 tin)
Peppers [4 scotch bonnet] (grated/chopped)
Onions [half] (diced)
Veg. Oil
Corned beef (1 heap spoon)
Salt
Cayenne pepper (for extra hotness)
Seasoning (optional)
Yam (5-6 slices)

Peak milk (1 tin)
Peppers [4 scotch bonnet] (grated/chopped)

Corned beef (1 heap spoon)
Salt
Cayenne pepper (for extra hotness)
Seasoning (optional)
Equipments: a frying pan, sauce pan, cooking spoon, measuring cup, chopping board, knife, vegetable grater, electric / gas cooker / stove, bowl, whisk.
Procedures:
1. Cut yam, Peel & wash. Place in a pot add sugar, salt, peak milk and 2-3cups of water.
2. Cover and boil on medium heat till yam is soft.

Prepare the Peak infused fried egg:
3. Place a frying pan on heat. Add 2-3cooking spoons of oil.
4. Toss in diced onions and let it caramelize for few minutes then stir in corned beef.
5. Add chopped/ grated pepper, season with salt and any seasoning of your choice.
6. Break eggs into a bowl and generously add peak milk whisk till it's fully combined.
7. Now add to the mixture and let egg set.
8. Peak infused fried egg is ready. Serve with boiled yam or any tuber crop / pastry.
