YAM BALLS




There are numerous ways to enjoy yam and one of those ways is making it into Yam balls. I shared one of my yam recipes yamarita (eggs-flour coated deep fried yam) with you and I have more to share on this yam series.
However, on this brand new experience with TD's Kitchen we will be making this flavour packed yam balls.

This is a reinvented recipe of yam balls which I infused with mild peppers, butter, egg yolk and fish most preferably you can use smoked or boiled mackerel, titus or even sardine. After my infusion this gorgeousness was rolled in egg wash, flour and breadcrumbs for that crusty texture. It wasn't just crusty on the outside but it was moist in the middle.

Yam balls can be eaten and served as: appetizer and also as main dish. This flavour packed yam balls was served with my Sardine Stew an important stew for students like me. I definitely will be sharing that with you soon but in the meantime, let's get right into the cooking action.

Now, let's cook!

INGREDIENTS: (2 servings)
Yam (4-5 slices)
Mild chilli pepper (blended)
Onion (finely chopped)
Butter 2TBSP
2 eggs
Flour
Breadcrumbs (optional)
Veg. Oil
Smoked/ boiled mackerel or Sardine.
Ginger & garlic (grated)
Salt
Seasoning

! Please Note !
One of the two eggs will be used as egg wash while, the yolk of the other egg will be infused to the mashed yam.


STEPS / PROCEDURES

Step 1: Cut yam slices, peel and wash. Place pot on heat and boil yam in salted water till soft.

Step 2: When soft, take off heat allow to cool a bit and place yam slices in a bowl, mash till it's smooth and fluffy.

TD's Tip: This is the moment you get to exercise those biceps. Most importantly ensure you mash each yam slice thoroughly to prevent lumps.

Step 3: Add onions, peppers, grated ginger and garlic, egg yolk, butter, seasoning, salt and fish. Stir till it's well combined

Step 4: Scoop some mashed yam and mould into small balls.

TD's Tip: Please ensure you use clean hands when handling food this is very important to prevent bacteria and from contaminating food. You can as well wear nylon gloves this equally works to keep your hands from getting messy.

Step 5: Roll balls in flour, then eggs, flour again and breadcrumbs. Repeat this process for every moulded ball.

Step 6: Heat fryer/ frying pan and fry yam balls till its golden brown.

TD's Tip: Please do take all necessary precautions when dealing with hot oil. Ensure you fry yam balls on both sides and maintain the golden brown colour. I usually flavour my oil (with garlic/ onions / cloves, etc.) before frying this gives more life to my dish and its just incredible.

Step 7: Place yam balls on kitchen towel to absorb excess oil and serve.
