How to Cook Nigerian Fried Rice | My Basic Recipe for the rice

Rice one of the most common staples across various regions in the world. Mind you this recipe only highlights how to cook the rice and how to prepare fried rice without getting it soggy or not perfectly cooked.
Many food maker's won't reveal to you that, what majorly gives your fried rice the greenish colour is the curry spice, any other shenanigans added is totally optional and in the best interest of whomever is making it. Using curry will never disappoint you! It comes out perfectly. Your rice is expected to be flavorful, rich by infusing herbs but don't over do it by adding way too much herb.


Ingredients for making only the rice:

Rice
Curry
Thyme
Veg. Oil
Rosemary
Black pepper
Cayenne pepper
Seasoning
Salt
Stock | Water
Onions (preferably white)
Garlic and ginger (preferably fresh)

Now let's cook

Procedures / Steps:

Step 1: Wash rice till it's clean, remove all the starch, parboil for like 10minutes and then drain in a seive.

TD's Tip: On the choice of rice, it's preferably you make use of Long grain or Basmati. This has more tendency of absorbing water and it fluffs unlike the small grain rice. But if the small grain works for you use it.

Step 2: Prepare the ingredients; Mince or grate ginger and garlic; dice onions; and measure out other ingredients.

Step 3: In a big pot that can accommodate the rice, add some oil, and then pan fry rice for about 2 minutes.

TD's Tip: Keep an eye on the rice and stir occasionally to avoid burning.

Step 4: Now add ginger and garlic, Onions, Rosemary, Curry and Thyme. Stir this thoroughly into the rice.

Then add in Salt, Seasoning, Black pepper and Cayenne pepper for heat. Stir it into the rice.


Step 5: Now add in any stock of your choice or just add good amount of water that would just be slightly above the rice. Bring rice to a boil and add more water if necessary.

TD's Tip: Seal with some foil to trap in some moisture.
Pan frying the rice would have slightly cooked the rice to some extent so when it starts boiling it doesn't take long before it softens.

Step 6: Check on rice it should be soft already now you can garnish as you wish.
