Nigerian Stewed Fried Egg

This rich dish makes an awesome breakfast, it can be enjoyed best with yam and bread.  One hint I'm going to give you is that when you want to pair it with yam endeavor you make the oil a little more than when you want to eat with bread just to have something to dip in. One of the best feeling 👌.



Let me introduce you to the INGREDIENTS.

Eggs
Fresh Tomatoes
Fresh herbanero pepper
Seasoning
Salt
Cayenne pepper
Dried Thyme (for some freshness)
Veg. Oil
Onions

EQUIPMENTS: Pan, Cooker, Knife, Whisk, Wooden Cooking  Spoon, Bowl and Chopping board.

Now let's cook!

PROCEDURES/ STEPS:

Step 1: Prep every ingredient dice and chop the onions, peppers and tomatoes. Crack open eggs into a bowl and season lightly.

TD's Tip: I made use of white organic onions for this recipe it was excellent and sweet but you can make use of the  regular red or purple onion. It will still come out nice.

Step 2:  In a pan,  add vegetable oil, sauté onions till translucent. Add in the diced and chopped Tomatoes and peppers, Add Season and thyme now stir till it's combined.

Step 3: Cover pan to make it cook further but, open and stir occasionally to avoid burning.

Step 4: Whisk eggs till it's foamy and stir into the pepper and tomatoes sauce on fire. Cover and leave  eggs to set.

TD's Tip: At this point reduce the heat to low and let egg set properly. 

Step 5: Now slightly scramble the eggs and put out heat.

TD's Tip: The residual heat in pan will finish the cooking process.

Step 6: Nigerian Stewed Fried Egg is ready!  Serve with bread or yam.
