Veggies Fried Rice | Nigerian Fried Rice

Rice has longtime been a staple across various regions in the world and different ways to prepare them has evolved just to create alternative to the regular boiled rice eaten with stew or soups as the case may be.
This is a twist to fried rice no protein like: liver,  meat , or chicken was added to this recipe. This is a nice option for vegetarians who still want to eat just like every other person.

INGREDIENTS:
(The use of only vegetables in this dish was a deliberate attempt)

Bell peppers (Green,Red and Yellow)
Carrot
Sweet corn
Peas
Spring onions
Runner beans
Veg. Oil
Black pepper
Cayenne pepper
Curry
Thyme
Chicken bouillon cubes
Salt

NOTE: You can as well add snails, mushroom,  broccoli or cauliflower.

PROCEDURES / STEPS:

Step 1: Follow the necessary methods of preparing your rice; measure out the rice parboil for like 10minutes to aid the removal of the starch which also makes the rice halfway cooked.

TD's Tip: After parboiling and seiving out the starch some still consider washing the rice still necessary just do what works best for you. On the choice of rice, it's preferably you make use of Long grain or Basmati. This has more tendency of absorbing water and it fluffs unlike the small grain rice. But if the small grain works for you use it. 

Step 2: In a pot add vegetable oil, stir in the rice andseason with condiments ; Black pepper, Cayenne pepper, Curry, Thyme, Chicken bouillon cubes, Salt. Stir the mixture and let it pan fry for few minutes. Please ensure you stir at intervals.

Step 3: Add enough water to the level of the rice, cover and let it cook on medium heat until the rice softens.

TD's Tip: trap moisture by using foil paper or  grease-proof bag. 


Step 4: When the flavored rice is done set aside and make the veggie stir-fry. In a pan add oil, onions and saute for few minutes. Add in the veggies and condiments as highlighted in the ingredients above.


TD's Tip: Ensure you don't over cook the veggies in order to retain it's freshness also season generously with the same condiments used for the rice this enhances the flavor of the dish.

Step 5: When stir-fry is done, add it to the cooked flavoured rice and stir till it's combined. Veggie fried rice is ready. Serve as desired I paired this with fried plantain and lettuce based salad.
